Marinated Mushrooms



Whew boy, this is another gem from the Big Bob Gibson Cookbook! On side note I've been researching laws regarding sharing recipes and from what I've found I believe I am in the clear to give the ingredients but not specific wording as to the text of the recipe.

With that being said....LET'S GO!

Ingredients
3/4 Cups Butter
4.5 Tablespoons Soy Marinade (See Below)
1.5 Tablespoons Olive Oil
1.25 Tablespoons Balsamic Vinegar
1/2 Teaspoon Black Pepper
1/2 Teaspoon Dried Oregano

1/2 Pound Mushrooms (I used mini portabellas)

Melt the butter in a medium sauce pan.  Then combine all of the ingredients  except the mushrooms and warm them (do not boil.  Then place the mushrooms and marinade in a ziplock bag for an hour.

While the mushrooms are marinating prep your grill for direct grilling at 400 degrees. Once the mushrooms have marinated for an hour they are ready for the grill.  To grill the mushrooms you can use either kabob skewers or a grill basket.  Grill each side for 3-5 minutes and baste with the marinade frequently.

* The marinade is oil based so you are likely to experience flair ups when basting.
** I used a grill basket and it worked well.

The best advice I can give here is to make more than a half pound as Kendra and I could have eaten a lot more of these babies.



As you can in the photo we also had chicken and potatoes but these mushrooms were the highlight of the meal!  They are fairly easy to make and they will be a regular item on our menu from now on.

     Soy Marinade
     3/4 Cup Soy Sauce
     1 Teaspoon Garlic Powder
     1 Teaspoon Onion Powder
     1 Teaspoon Ground Ginger
     1 Teaspoon Paprika
     1 Teaspoon Sugar
