BBQ Lasagna

As Uncle Jesse used to say to Aunt Becky, “Have mercy!”
This recipe was inspired by an episode of Diners, Drive-Ins, and Dives. Guy Fieri was visiting HoBo’s BBQ in Temecula, California and this was the featured dish.

This one was amazing and definitely worth the time. 

Ingredients:
1 lb smoked pulled pork
1 lb smoked pulled chicken
1 lb smoked summer sausage 
12 boiled lasagna noodles
15 oz barbecue sauce
32 oz sharp Cheddar-Monterrey Jack cheese

Equipment:
9” x 13” pan
  1. preheat the oven to 400 F
  2. Boil the lasagna noodles for 9 minutes in a pot of salted water. When cooked, drain and transfer to an ice bath for 1 minute. Lay out the noodles on a large cookie sheet and spray with cooking spray.
  3. Place 3oz of bbq on the bottom of the pan. Then add 3 noodles to the bottom with slight overlap (if the noodles allow). Next add 1lb of pulled pork, drizzle with 3 oz bbq sauce, and top with 8 oz of cheese. Add another layer of noodles followed by 1lb of chicken, drizzle with 3oz bbq sauce, and 8oz of cheese. Arrange another layer of noodles, add 1lb of smoked sausage, drizzle with 3oz bbq sauce, and top with 8oz of cheese. Place the last of the noodles on the top, drizzle the remaining bbq sauce, and add the remaining cheese.
  4. Cook for 30 minutes or until cooked through.

This recipe was worth the effort and turned out amazing.  Some advice that I would give is to find a spicier sausage, potentially substitute brisket for the sausage, and to take the lasagna out at 25 minutes. I enjoyed the crunchy cheese but it may not be for everyone.
